I think she’s just an interesting character (and it probably doesn’t hurt that she’s a hot chick), so they didn’t want to kill her off. She has an intriguing connection to the next film, although they never really establish it as a fact (being intentionally vague).
She is a shapeshifter, so it’s possible, I guess, that she could move anything vital out of the way. Maybe.
