It seems a lot of the Akula stuff that keeps popping up is actually fan fic, I guess it was a popular ship in the video games and got adopted by them for their stories. I need to be more careful about that in the future, theres just so much non-canon stuff out there that looks legit. Until you dig deeper.

Looks like a Galor class ship got frisky with one of its Dominion buddies.
Which makes sense since they were allies, and after Sisko mined the wormhole they were cut off from their shipyards in the Gamma quadrant.
