I just got an iPad, myself.
I’m enjoying Tiger Woods 2011. It’s a bit less frustrating interface than the console version I had a few years back. Putting in particular is much easier. Surprisingly, it’s free. There’s some in-app purchases available, but I’m not yet sure how necessary they are
The PBS app is fun, especially since we lost the ability to see the local station after the HDTV changeover. You can stream a lot of their content, or purchase it to watch whenever. The app itself is free.
Aljazeera also has nice iPad app that streams their English feed. Also free.
The Atomic browser is something of a surprise. It’s basically a Safari replacement for both iPad and iPhone/Touch. It has a bunch of nice features, including tabbed browsing. There’s a free version that’s slightly limited that you can check out, and the full version is only a buck.
I’m also trying out ebooks via the free iBooks. I’ve read books on my phone, but found it slightly annoying. So far the iPad versions are a somewhat better. (I’m sticking to the public domain stuff for now. Not sure I want to buy DRMed books.)
You might try the Kindle app. It’s free and may also let you access your library between different platforms. At least it does with an iPad & iPhone combo. You can also get Google & Wikipedia searches in addition to the regular dictionary searches for word lookups.

Yeah, I’ve avoided Kindle (and Nook) for similar lock-in reasons. I’ve found Free Books, which has a lot of unencumbered books in one spot. They even provide audiobooks. I’ve currently got Frankenstein and Little Fuzzy in my library.
The GF and I are having a lot of fun playing Cribbage. There’s a free one if you want to get up to speed on the game, but we got the premium version so we could use the pass-and-play functionality.
Sadly there’s not a lot of games that take advantage of the iPad’s boardgame possibilities. There’s a few of the standards plus Risk and Catan. I’m tempted to start learning iOS programming.
Another nice app for books, and the one I spend more time in than any other app: Stanza
ComicZeal is a great app for reading comic books on the iPad. It supports all of the formats that you tend to ‘find’ digital comics in.

Recent additions (at least since my last call to arms two years ago)
Now I want something new. I am over Angry Birds and have finished Plant v Zombies twice. RECOMMEND ME QUALITY STUFF BABIES!
Dragonvale! And if you like puzzles, Celtic Knots. And if you like trivia that may or may not actually be accurate, Trivial Pursuit (in which an octopus is actually an otoscope). TP is an iphone app, so it’s a bit pixellated at full size on the iPad.
