I wonder why the alliance didnt just some torpedos with light saber crystals incorperated. Ya know when you fire them the blade shoots out the front, with the force of the torpedo engine it would cut through whatever it hit. Making it alot easier to shoot down a space station, or blow a shield generator from space.

I’d guess for the same reason that Samurai didn’t attached their swords to animals and go jousting. In short: tradition. Contrary to the fact that you see a lot of people in the movies with 'sabers, they’re traditionally considered very personal, unique weapons. Each Jedi must build their own, perfectly fit to their fighting style.
Hmmm. ‘In Revenge of the Sith’, Grievous’ droids used electrostaffs that blocked lightsaber attacks. You could just make a ship outta that to combat a lightsaber torpedo.
Then again like any energy weapon, you just need the right frequency to block or exploit.
