If you’ve never seen any of it, start with the new series. I defy you not to love it. 
The old stuff is great, but it’s a bit clunky to watch if you didn’t grow up with it, cardboard sets and plastic monsters and all.

I’ve not seen any of the old stuff. So, I can’t help you with that, but the new has only been 4 seasons so far. I tried to watch some of the 1st Doctor stuff, and it was pretty hard, kinda like when I tried to watch some of the old Battlestar Galactica…
