So, here’s why they need dilithum. Without dilithium they ship can only travel about Warp 5. With dilithium they can go to Warp 7 in TOS and 10 in TNG.

I own it. It was a holiday gift. But it was published in 1999. These episodes happened in 1995.
Captain Kirk had a private dinning room on Deck 5 connected in between his office and his quarters. (He didn’t need a ready room on the bridge like SOME sisssy mary captains we know).
I have a the specs and diagrams at home
But it wasn’t big enough to convert to a galley & seat dozens.
That’s just greedy.
