I believe this was the episode that saw the first appearance of the Vulcan Neck Pinch.
You are correct.
Direction and script said for Spock to come up behind evil Kirk and judo chop him. Nimoy throughout the series fought for Spock. Nimoy said a judo chop was undignified and fought for something else. Nimoy felt Vulcans could use energy through their hands or something like that. Be sure to watch how Spock uses his hands throughout the series, especially when using the Vulcan mindmeld.
