Think of the audacity there. She slapped the king. She has no real respect for him or any man for that matter. The fear was an afterthought. She realized, as you say, she could end up like Stark. I think she forgot he was king, honestly. She still sees him as her son, the boy she groomed for power and intended to control. Both her grooming and her control disappeared the moment Joffrey felt the rush of power.
