Would it not be the same as G-forces in a fighter jet or Space Shuttle? I mean. You don’t have pilots snapping bones.

Those kinds of G-forces are generalized over the entire body, and they’d force you back into a seat designed for that purpose, not to mention that pilots receive special training for dealing with that stress. Plus, of course, the gravity distortions shown are significantly stronger than anything a pilot could ever encounter and hope to survive. Pine cones that weigh the same as an anvil are probably hundreds of gravities. Under that pressure, Carter would have weighed over a ton, at least. Human bones are strong, but not that strong.
